I cannot speak for Victoria 2 or Imperitor Rome as I havent played enough (or at all in the case of Imperitor Rome). The major difference between CK2 and other grand strategy games is that you control a dynasty (bloodline) rather than a nation. If the medieval period really tickles your fancy, CK2 might be for you. HOI4 is almost entirely war focused, while EU4 is more of a nation builder. I would recommend either EU4 or HOI4, depending on personal preference. I havent played it since the 2.0 update, but it had less mechanics than the other games. If youre willing to dig a bit deeper, Stellaris in my opinion is the easiest Paradox game to learn. Theres still an element of empire building but its nowhere near as involved level 1 3 points 1 year ago Total War games are a lot easier to get into than Paradox Interactive games, so if you havent much touched strategy games Id recommend starting with them.

Total war is a lot less in depth in general and are more about fighting the actual battles. Id recommend picking the game with the timeline youre most interested in and go from there. The rest of the paradox games are quite a bit more in depth, nothing that a few YouTube videos cant fix though. Just watch someone do a playthrough of it and you can pick up a lot of the basics easily, theres not much stuff hidden by complex menus and such, and most of your actions have a tangible or visible impact.
